mediterranean lamb patties / snow pea & radish slaw / baked fries

Contents of your meal kit:

ground lamb
potato
slaw vinaigrette base
snow peas
radishes
mint
seasoned chia seed binder
feta yogurt

Cookware needed: baking sheet, salad bowl, mixing bowl, medium or large skillet (see option to use grill in notes)

Finishing steps:

  1. Place baking sheet in the oven and preheat oven to 425. Cut potato into steak-fry-sized wedges. Working on the cutting board, toss potato wedges with olive oil, salt & pepper. When the oven is hot, add fries to baking sheet and roast for 20-25 minutes. Halfway through the cooking time, use a spatula to carefully turn the fries. Return to oven until tender on the inside and crisp on the outside. Continue with next steps while the fries are baking.
  2. Pour slaw vinaigrette base into the bottom of your salad bowl and add an equal amount of olive oil. Whisk or mix with a fork to combine. Prep ingredients for the slaw, and add to the salad bowl as you go: (1) Thinly slice the snow peas on a diagonal, removing ends and strings if desired. (2) Trim and thinly slice the radishes. Stack up the slices and cut into matchsticks. (3) Remove mint leaves from the stem and roughly chop. Toss everything together and season with salt & pepper to taste. Set aside.
  3. In a mixing bowl, combine the seasoned chia seed binder with warm water (see note). Let sit for a minute or so until thickened. Add ground lamb, season generously with salt & pepper and thoroughly mix together, using your hands.   Form 2-3 small patties per person.
  4. When about 10 minutes remain on the fries, heat a small amount of oil in a nonstick skillet over med-high heat. When skillet is hot, add lamb patties and cook 3-4 minutes per side.
  5. Divide patties, slaw, and fries between plates, and enjoy with the feta yogurt!

Notes:

  • Too hot in the kitchen? Try taking this meal out to the grill. Roast potatoes in a foil packet directly on the grill, and coat lamb patties with a small amount of oil before grilling them as well.
  • When recipe calls for water add the following: 3 tbsp for 2 portions, 6 tbsp for 4 portions, and 9 tbsp for 6 portions.
